Breakfast For Dinner: Buffalo Cauliflower “Chicken & Waffle” Sandwich

For the third installment of our “Breakfast For Dinner” series, we’re bringing you our better-for-you spin on a soul food classic . Introducing our Buffalo Cauliflower (or chicken) & Waffle sandwiches. The Partake fam welcomes folks from all walks of life, so we’ve included flexible vegetarian, chicken and plant-based chicken options so that nearly everyone can enjoy this delicious meal. For an added kick, drizzle your sandwich with hot honey before topping it off with the second waffle!

Breakfast For Dinner: Buffalo Cauliflower “Chicken & Waffle” Sandwich

Ingredients:

Waffles

  • 1 cup Partake Classic Pancake & Waffle Mix
  • ⅔ cup water
  • 2 tbsp neutral tasting oil or melted butter

Chicken or Cauliflower

  • 1 small cauliflower cut into small bite sized florets; 8-10 oz chicken breast; 8-10 oz of plant-based chicken
  • ½ cup brown rice flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper
  • ¾ cup unsweetened non-dairy milk or dairy milk of choice

Buffalo Sauce

  • ½ cup water
  • ¼ cup white vinegar
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ¼ tsp cayenne pepper
  • ½ tsp sea salt
  • 3 tsp tomato paste

Optional

  • Lettuce
  • Vegan garlic aioli recipe can be found (here)
  • Hot honey

 

Directions:

Waffles

  1. Preheat waffle maker.
  2. Combine water and Partake mix.
  3. Once fully combined, add oil or melted butter. Mix until combined.
  4. Cook according to waffle iron instructions. Set aside.

If using cauliflower

  1. Line a baking tray with parchment paper and preheat your oven to 450 degrees F.
  2. Place your cut up cauliflower in a large bowl. Then in a separate bowl, combine your flour and all the seasonings and mix to combine. Then add the milk and mix well to make your batter. Now pour the batter into your bowl with the cauliflower and mix well to evenly coat each piece.
  3. Place your coated cauliflower on your prepared baking tray, one at a time, in a single layer and bake for 20 minutes. Flip once at the halfway point.
  4. Meanwhile, prepare your buffalo wing sauce by adding all its ingredients to a small sauce pan. Whisk to combine and simmer over medium heat 3-5 minutes, allowing the flavors to combine.
  5. Remove the cauliflower from the oven, and coat the bites in your buffalo sauce. Then return to the oven for 10-15 minutes, flipping once halfway through.
  6. Remove from oven.

If using chicken

  1. Line a baking tray with parchment paper and preheat your oven to 400 degrees F.
  2. Place your whole chicken breast in a large bowl. Then in a separate bowl, combine your flour and all the seasonings and mix to combine. Then add the milk and mix well to make your batter. Now pour the batter into your bowl with the chicken and make sure the chicken breast is coated evenly.
  3. Place your coated chicken breast on your prepared baking tray and bake for 15 minutes.
  4. Meanwhile, prepare your buffalo wing sauce by adding all its ingredients to a small saucepan. Whisk to combine and simmer over medium heat 3-5 minutes, allowing the flavors to combine.
  5. Remove the chicken from the oven, and coat the chicken in your buffalo sauce. Then return to the oven for 8-10 minutes.
  6. Remove from oven and let rest for 5 minutes. Cut into bite sized pieces.

If using breaded plant-based chicken

Simply cook according to package directions, remove the chicken from the oven or air fryer, and coat the chicken in buffalo sauce before assembling per the instructions below.

Sandwich assembly:

  1. Spread vegan garlic aioli, or spread of choice onto the interior side of two waffles.
    Pro tip: Make sure to let the waffles cool to prevent the aioli from melting.
  2. Add lettuce and buffalo cauliflower or chicken. Drizzle hot honey if desired.
  3. Top with second waffle and enjoy!
